Today’s writing challenge is to share a recipe from my family. Both my grandmothers (paternal and maternal) as well as my mother taught me how to cook (I hate it but I’m married and got a kid, so I suppose they have to eat) I can not think of any one recipe that stuck out to me except what my grandmother called the 125 Year Old Black Walnut cake! I made it this past Christmas, now I may have had a little to much special eggnog and baked mine a little to long, it was a little dry but with more special eggnog I didn’t care it was still delicious.
I never think about making this cake until around the holidays, so I have dubbed it “My Holiday Cake”. Very simple recipe and it brings a smile to my face as I can close my eyes and see my grandmother assist me with assembling the ingredients. So here’s how to make my favorite Holiday Cake.
1/2 cup Crisco
1/2 lb. margarine (2 sticks)
3 cups all purpose flour
2 cups sugar
1 tsp vanilla (I put a tad bit more)
1 tsp baking powder
1/2 tsp black walnut flavoring (I personally omit this)
1 cup evaporated milk
1 Cup chopped black walnuts (I use about 2 cups as I like walnuts in my cake as well as on top.
Cream margarine and shortening, add sugar and beat until light and fluffy. Add eggs one at a time, beating well. And flavoring and beat well.
Mix 1/4 cup flour with nuts. Sift remaining flour with Baking Powder and add alternately with milk, starting and ending with flour.
Fold in floured nuts, DO NOT BEAT. Bake in greased and floured tube cake pan.
Bake 1 hour and 20 mins at 325.
**I like to put a glaze on top of the cake as it helps keep it moist and its good, lol. To make glaze you just mix powder sugar and mix together. No measurements I just make it till its a thick mixture. I also add a few drops of flavoring to give the glaze a bit a taste. Then I sprinkle walnuts on top and wait for the angels to sing as I cut into this delicious goodness.
