Roasted Green Bean, Sweet Potatoes, and Tomatoes

I’m trying to find creative plant based meals, since I’m embarking on a mostly plant based lifestyle. Yesterday for lunch I made some roasted veggies and they were delicious. I don’t measure, so this recipe you will have to wing it to your liking.

Ingredients:

  • Fresh green beans
  • 3 small sweets potatoes
  • Grape tomatoes
  • Minced garlic
  • Salt and pepper
  • Olive oil

Prepare your green beans (snap the ends, break them in half). Cut up your potatoes. Rinse. Cut your tomatoes in half. Throw all the your veggies in a bowl. Pour in some olive oil, season is salt and pepper, add your minced garlic. Toss them until they are well coated. Pour onto a sheet pan. Place in oven on 350. Roast until potatoes are soften. You may want to cook potatoes prior to the green beans and tomatoes, as it will take potatoes longer to soften depending on how big you cut your potatoes. I left mine in for about 30 to 40 mins, as I like a little char on my green beans and potatoes. Just eye and test for your liking.

After it was done to my liking, I added more salt and pepper, added some parm cheese, and topped with slivered almonds. It’s was delicious! Try it and let me know what you think. You could also toss in balsamic vinegar and roast. Many different options to try.
